– 1 teaspoon vanilla extract

Instructions:

1.  Separate and Beat the Eggs: 

Start by separating the egg yolks from the whites. In a mixing bowl, beat the egg yolks with half of the sugar until the mixture becomes smooth and light in colour.

2.  Combine Milk, Cream, and Flavorings: 

In a separate saucepan, combine the whole milk, heavy cream, vanilla extract, ground nutmeg, and a pinch of salt. Heat the mixture over medium heat until it’s warm but not boiling. Stir occasionally to infuse the flavours.

3.  Temper the Egg Yolks 

Slowly pour a small amount of the warm milk mixture into the beaten egg yolks, whisking continuously. This process, known as tempering, prevents the eggs from curdling. Once tempered, pour the egg yolk mixture back into the saucepan with the remaining milk mixture.

4.  Cook the Eggnog: 

Cook the mixture over low heat, stirring constantly, until it thickens slightly. Be patient – this should take about 5-7 minutes. Avoid boiling, as it can result in a curdled texture.

5.  Cool and Add Spirits (Optional):
